- 15th, 16th, 17th and 18th September for the Merlot - 24th and 25th September for the Cabernets Vibrating sorting table for an optimal selection
- Vinification :
Traditional vinification with techniques adapted according to the vats and grape varieties. Regular tasting of vats in the presence of the consultant oenologist (Laboratoire Rolland).
- Ageing :
- 65% in new barrels - 35% in second-fill barrels The duration of ageing is yet to be determined. It will depend on the wine’s development.
