- 2003 vintage :
The harvesting was spread out between September 9 and October 3, interspersed with several breaks so as to manage the plot by plot vinification with the greatest precision. The harvest reception system was perfected further by installing a third vibrating sorting table (a vibrating table before de-stemming, two vibrating tables after de-stemming, with 25 to 30 sorters for only 14 pickers). The vats (in stainless steel, oak and concrete) were filled each time only with the use of conveyor belts.
The Merlot came in at between 13.5° and 14.2° and the Cabernet Franc, at unprecedented levels of between 14.8° and 15.3°, with magnificent balance and in perfectly healthy condition. The alcoholic fermentation was long at temperatures controlled appropriately in accordance with such richness.
The blend is made up of 50% Merlot and 50% Cabernet Franc. This is the first time that the Merlot has evened out the richness of the Cabernet Franc rather than the reverse.
