Geographical situation :
Clay-limestone plateau and slopes at Saint Martin in Saint Emilion.

Asteria limestone

7 hectares (17.29 acres)

Average density of plantation :
6,500 plants per hectare

Grape varieties :
- 70% Merlot
- 20% Cabernet Franc
- 10% Cabernet Sauvignon

Average age of the vines :
37 years

Average yield :
35 hectolitres per hectare

Vineyard management techniques :
These remain traditional and adapted to the profile of each plot.
The vineyard is ploughed and/or seeded with grass.
Manual de-leafing and crop thinning have been practised on a plot by plot basis for over 15 years, taking into account the growing season, the grape variety, the age of the plant and its vigour. These criteria are of great importance in our vine-growing strategy.

2005 weather conditions and harvest:
The 2005 growing season enjoyed almost perfect weather conditions. The bud-break was a little late. With light rainfall and warm temperatures the time was made up, and the flowering took place at the beginning of June for the whole range of grape varieties.
June was hot and sunny and favoured a normal increase in berry size until the setting, and then bunch closure. Storms during July brought the water necessary for the vine to continue growing, and at the end of August a few rain showers produced the moisture needed by the plants.
In spite of sporadic rain showers, the September weather enabled us to maintain perfectly healthy vines in all the grape varieties.

Harvesting dates :
- 22, 23 and 27 September for the Merlot,
- 5 and 6 October for the Cabernets,
- vibrating sorting table for optimal selection.

Vinification :
- Plot by plot fermentation,
- Gentle extraction to avoid any harshness or hardness in the tannins,
- Vatting period lasting 3 to 5 weeks, in temperature-controlled small-sized concrete vats (60 hl to 80 hl)at an average temperature of 28°C,
- Regular tastings during the vinification with the consultant œnologist (Laboratoire Rolland).

Ageing :
60% in new barrels, 40% in second-fill barrels, for a period of 14 to 18 months. Oak barrels from four different coopers are used.
