Vineyard management:
Our vineyard practices are the fruit of fifteen years of managing both soil and plants with a method largely inspired by biodynamism. Methods including biological studies of the soil, composting and companion plants. Green harvest is carried out in two passages, one after bunch closure in order to eliminate overcrowding, the second at veraison, to regulate the charge and maturity. Leaf-thinning complements this work by ensuring an optimum level of aeration and health for the maturing grapes.

Growth cycle:
After a cold dry winter, the vines budded slowly during a cold, wet April. May and June were relatively warm and saw a huge, though late, flowering for the Merlots and the Cabernets. The summer was characterised by lots of sun and showers in July, with the reverse, a cold, wet August causing late veraison. Happily, September was warm and sunny with cool nights allowing long balanced ripening and stopping the spread of rot.

Harvest:
Merlot – 7 October and 11 to 15 October
Cabernet Franc – 18 October
Cabernet Sauvignon – 28 October

Aging:
Depending on the tasting of the berries, we have a choice of tank in a cellar equipped with seven cement tanks and four wooden tanks. In this way, the extraction can be either done by pumping over or punching down. The wine is run off into barrel, of which approximately 80% are new.
